Can Homemade Sandwich Bread Have a Lower Glycemic Index?

Can simple changes in ingredients and fermentation produce a loaf that’s both delicious and gentler on blood sugar?

That’s the question currently under investigation.

We’ll examine poolish fermentation, barley flour, whole wheat, flaxseed, and other techniques to see what the evidence reveals.
